Cal Poly has one of the largest undergraduate Dairy Science student enrollments in the United States and is the only west coast university to offer a specific Dairy Science major. Modern facilities equipped with some of the latest technology provide a high level of support for Cal Poly's "Learn by Doing" philosophy. The Dairy Science Department offers $30,000 a year in scholarships, in addition to University and College scholarships.

Students come from diverse backgrounds and are prepared to succeed in a wide range of careers when they graduate, including food safety, biotechnology, veterinary medicine, dairy plant management, dairy/food chemistry and research, promotion, marketing and sales, artificial insemination manager/technician, animal nutrition, agricultural journalism, and dairy herd manager. Cal Poly graduates are in high demand throughout the country.

Los Lecheros Dairy Club is one of the largest and most active clubs on campus and gives students many opportunities to develop leadership skills, have fun, interact with faculty and peers, and develop contacts in the dairy industry. Students may also participate in the dairy cattle or dairy products judging teams, which consistently win awards in competitions around the country. Students at work

The department manages a dairy herd consisting of 80 milking age registered Holsteins and 85 milking age, registered Jerseys. Students gain practical experience in animal care, nutrition, and other aspects of dairy farm management, under the supervision of the Dairy Science faculty. 

The Creamery is used as a teaching and research laboratory, and to manufacture products for sale. Students learn how to manage a processing plant, distribute and market dairy products, and also learn the science and technology of manufacturing milk, cheese, butter, yogurt, ice cream, and other dairy products. A Master of Science degree in Agriculture with a specialization in Dairy Products Technology is also offered for students who wish to enrich their education and career prospects through applied science while working on research projects in the Dairy Products Technology Center under the supervision of the Dairy Science research faculty.

For graduate students the Dairy Science Department coordinates with the College of Agriculture to offer a Master of Science in Dairy Products Technology.
